Spicy Ground Beef Noodles

Spicy Ground Beef Noodles

Or pork actually. Or ground chicken - or pretty much any ground protein you'd like. But whatever you use, just make them.

Ingredients

Sauce

  • 1/2 cup beef broth
  • 1/4 cup soy
  • 2 tablespoons hoisin
  • 2 tablespoons brown sugar
    1 teaspoon sesame oil

Noodles

  • 1/2 yellow onion, diced
  • 1 red Holland peppers or 1 red jalapeno, sliced
  • 1 pound ground beef, or pork or whatever
  • 5 cloves garlic, chopped
  • 1.5 tablespoons ginger paste
  • 1 tablespoon cornstarch mixed into 2 tablespoons water
  • 1 tablespoon jarred chili crisp
  • 3 green onions, diced
  • 8 ounces noodles (I used fresh ramen, but use what you have) cooked according to package directions
  • Mae Mai crisp onion & garlic, you can get it here

Directions

Sauce

  1. Combine sauce ingredients in a small bowl, mix well and set aside

Noodles

  1. Heat a large pan, add a tablespoon of oil and when hot add the onion & peppers, cook until just softened - 3 to 5 minutes
  2. Put in the ground meat, and cook, breaking up as you go until the pink is gone
  3. Make a well in the center, add a bit more oil then the garlic & ginger - cook until fragrant, about a minute
  4. Add the sauce, and let simmer a couple minutes
  5. Stir the cornstarch & water, then mix in to the pan - stir well it will start to thicken
  6. Add the chili crisp, green onions and noodles, mix really well to combine
  7. Serve with a little extra chili crisp oil on top, then a little sprinkle of the Mae Mai
